Barbecue Eggplant Pizza (ala Grace)
Pizza dough – (either homemade -i do mine in a bread maker, or you can use frozen bread dough, or I hear you can ask for extra from any pizza place!)
Spinach- or something green to add some color!
Sautee eggplant and onions until transparent. Spread dough in a lightly greased pan and remove excess (for breadsticks!). Brush good bbq sauce on dough, add some herbs for flavor, then layer tomatoes (i sliced mine in rings and then quartered them). Sprinkle eggplant and onions evenly throughout pizza. Sprinkle some of the cheese on top, salt and pepper, layer chopped spinach, then put on the rest of the cheese. note: You don’t have to use very much cheese, we used just enough to make it all stick together nicely.
Bake for 15-20 minutes at 425 or until bubbly and the crust is browned.
