Food update

I can tell I need vitamins these days. It's been… a winter. I've gone back to old-faithful, brewing up quarts of red raspberry leaf and nettle tea, aka "Happy Woman Tea". That, and I'm trying to remember to take cod liver oil every day.

I got the opportunity to render some beef tallow. Katy had some hanging around in her freezer from an old beef share. Super simple! All you do is throw it into the crock pot on low. After a few hours all of it was melted down and some solid bits were floating around in there. I stirred occasionally to keep it from burning, but that was it. My house smelled like a roast was cooking.

I strained the liquid fat through a cloth. All the solids ended up going to the chickens. I probably could have done something with them, but I didn't get around to it.

It turned a clean white as it cooled and solidified. It smells good too, like pie crust. Not sure what we'll do with it yet, but I'll be sure to keep you posted.

Katy and I saw this recipe and had to try it. Ours didn't turn out quite like the picture, but it was good! I'm excited to play around with different things. Cauliflower is so versatile. I see it popping up all over the place with all the paleo/grain-free stuff.

We made gluten free savory pancakes. I love savory representations of sweet classics. These were great. We made a mushroom and kale and a curry beef. We also had different toppings and sauces. Yum! We also made some blueberry ones for dessert.

Loving roasted beets these days. Not that I ever stop loving them. But this snowy February… they are some kind of perfect.

Gummy snacks. We made the fruit ones with kombucha and apple juice this time, and then I did more coconut milk/banana ones. I think I'll have to make a batch every week to keep up with the kids' appetite for them.

I'm loving my coffee and cream. I've been adding a dash of cinnamon and cayenne to it. I'm usually pretty unfazed by winter blues, but lately I'm finding myself soaking in all those warming details.
